Banana Cake

because banana bread is overrated :)

Banana Cake (9×9-pan)

  • 2 very ripe medium bananas
  • 1/2 c. low-fat sour cream
  • 1 egg
  • 1/2 c. granulated sugar
  • 2 T. unsalted butter
  • 1 t. vanilla extract
  • 1 c. unbleached all-purpose flour
  • 1/2 t. baking soda
  • 1/4 t. coarse kosher salt

Cream all wet ingredients together with the sugar. Mix in the dry ingredients. Bake in a lined baking pan at 375F for 16-18 minutes.
