Whole Wheat Apricot Cookies

Whole Wheat Apricot Cookies (makes ~16 cookies)

  • 1 c. + 2 T. whole wheat pastry flour
  • 1/2 t. baking soda
  • pinch of salt
  • 1/4 c. unsweetened natural applesauce
  • 2 T. unsalted butter, melted
  • 2 T. dark brown sugar
  • 1 egg
  • 1/2 t. vanilla extract
  • 1/4 t. almond extract
  • 1/2 c. dried apricots. chopped
  • 1/3 c. dried, unsweetened coconut shreds
  • 21 g. white chocolate chips

In a large bowl, combine applesauce, butter, sugar, egg, and extracts. Add flour, baking soda, and salt. Mix until a dough forms. Fold in apricots, coconut, and chips. Scoop ~1 T. rounds of dough onto a lined cookie sheet and press down to form cookies (they don’t spread much). Bake in a 350F oven for 12 minutes.
