Butternut Squash Corn Chowder
  • 2 c. chopped butternut squash
  • 1/4 purple onion, chopped
  • 1 clove of garlic, minced
  • 1/2 t. madras curry
  • 2 c. chicken stock
  • 5 shrimps, peeled/deveined/cubed
  • 1- 8 oz. can of corn, drained
  • coarse salt & pepper
  • generous pinch of granulated sugar
  • 1/4 scant c. heavy cream
