Taro Cake w/ Taro Cream

Taro Cake (makes 2 – 1 1/3 c. filled square cake pans)

  • 3/4 c. granulated sugar
  • 3/4 c. canola oil
  • 2 eggs
  • 1 c. unbleached bread flour (*supposed to be pastry flour)
  • 2 t. baking soda
  • 1/2 t. salt
  • 1 t. coconut cream powder
  • 1 1/2 c. grated taro

Bake at 300F for 30-35 minutes.

Taro Cream

  • 6 oz. taro, cubed and cooked
  • 1 T. coconut cream powder
  • 1 1/2 T. granulated sugar
  • 1-2 T. unsalted butter or coconut oil
  • heavy cream, whipped
