Sonoma Chicken Salad

Sonoma Chicken Salad adapted via Cooking Classy

  • 2 lbs. chicken breast, slow cooked w/ chicken stock
  • 3/4 c. finely chopped celery
  • 2/3 c. toasted pecans, roughly chopped
  • 1/2 c. dried sweetened cranberries
  • 2 T. grated parmesan cheese
  • 1 c. Smart Balance mayonnaise
  • 1/4 c. apple juice
  • 2 t. apple cider vinegar
  • 3 T. honey
  • a squeeze of mustard
  • 3/4 t. onion powder
  • 1 T. poppy seeds
  • salt & pepper
