Cranberry-Orange Muffins

Cranberry-Orange Muffins (makes 12 standard size)
  • 1 c. oat flour
  • 1 1/2 c. whole wheat flour
  • 2 1/2 t. baking powder
  • 1/2 t. kosher salt
  • 1 t. orange zest
  • 1 egg
  • 1 c. unsweetened vanilla almond milk
  • 4 T. natural unsweetened apple sauce
  • 3 T. light agave nectar
  • 1/2 c. dried sweetened cranberries
Separately mix dry and wet ingredients, and then add wet to dry. Spray muffin tin and fill with batter. Bake at 400F for 15 minutes.
