The Ultimate Cranberry Cookie Bar

I’ve been playing around with variations of this cranberry-almond-and-quinoa combination since Bon Appetite gave me Almond-Cranberry Quinoa Cookies and Eat 80/20 shared her Quinoa Breakfast Bars. I came to an ultimate recipe that I LOVE.

The Ultimate Cranberry Cookie Bar (6 servings)

  • 3/4 c. stone ground whole wheat flour
  • 1/2 t. salt
  • 1/4 t. baking powder
  • 1/4 t. baking soda
  • 2 pkg. or 7 g. Truvia
  • 1/3 c. no sugar added natural apple sauce
  • 1 large egg
  • 1/2 t. vanilla extract
  • 1/2 t. almond extract
  • 1/4 c. dry measured quinoa cooked with 1/2 c. water
  • 1/2 c. Quaker old-fashioned oats
  • 1/3 c. sweetened dried cranberries, halved
  • 1/2 c. slivered & blanched almonds, toasted
  • 1 T. mini semi-sweet chocolate chips
  • 1 heaping scoop ON Any Whey Protein Powder

Nutrition Facts per Serving: Calories – 230; Total Fat 7g (Sat 1g); Cholesterol 28mg; Sodium 16mg; Total Carbs 30g (Sugar 8g, Dietary Fiber 5g); Protein 12g

Mix all the dry ingredients in a medium bowl, and whisk together all the wet ingredients in a measuring cup. Fold in the protein powder last, and then pour the batter into a canola oil sprayed baking pan. Bake at 375F for 10 minutes.
